Formagella Tremosine: alpine flavours on the shores of Lake Garda
Formagella Tremosine is one of the most authentic and least known cheeses of Lombardy. Produced on the Tremosine Plateau, perched above Lake Garda, this small semi-soft cheese tells the story of an extraordinary territory, suspended between the Alps and the mild climate of the lake.
The territory
The Tremosine Plateau is located in the province of Brescia, at over 400 metres above sea level, overlooking the western shore of Lake Garda. The unique microclimate — influenced by both alpine currents and the mildness of the lake — creates ideal conditions for raising cattle and goats, whose milk gives the cheese unique organoleptic characteristics.
How it is produced
Formagella Tremosine is produced with whole cow's milk, sometimes with the addition of a small percentage of goat's milk. The curd is broken to a medium grain, pressed into cylindrical moulds and salted in brine. Ageing varies from a minimum of 20 days for the fresh version to 60-90 days for the more aged version, which develops a more pronounced rind and a more intense, buttery flavour.

How to enjoy it
Formagella Tremosine is a versatile cheese, suitable for both direct consumption and cooking:
- At room temperature on mountain bread or grilled polenta
- Melted on white wine risotto or potato gnocchi
- On the board with Brescian cured meats, chestnut honey and walnuts
- Oven-gratinated on seasonal vegetables
