Salame con Cervo by Tito Speck is the most noble and delicate variant of the South Tyrolean game charcuterie tradition: venison, with its lean, dark and intensely aromatic profile, represents the game animal par excellence of medieval alpine hunting and gives the cured meat a complexity that evokes the character of the mountain forest and the high alpine meadows. The red deer (Cervus elaphus) has been present in the Dolomites, Vinschgau and Ultental since the Neolithic and was in medieval society a symbol of nobility: in South Tyrol, the antlers of the deer adorned the coats of arms of the counties, and deer hunting was the exclusive prerogative of the highest social strata. With the democratisation of hunting in the 19th century, venison also became accessible to ordinary mountain dwellers, and the artisan tradition of the deer-pork blend for sausages developed in the mountain villages of South Tyrol. Tito Speck processes venison from controlled alpine hunts and blends it with selected pork in carefully balanced proportions: the deer brings lean dark meat, delicate aromas of woodland mushrooms and mountain herbs; the pork base provides body and binding. Ageing takes place in climate-controlled premises reproducing the South Tyrolean mountain microclimate.
