Formagellina Valseriana Paleni is a typical cheese from the hills and mountains of Val Seriana, produced with freshly milked milk to preserve its freshness and aromas. The rind is smooth, thin, sometimes crumbly, of yellowish color that darkens with aging. The paste is compact, soft, white tending to light yellow, with rare and regular holes. The taste is sweet, aromatic and more intense with aging. The smell is delicate, with a slight acidic note, more pronounced during summer months.

Formagellina Valseriana is the smallest and freshest format in the production of Caseificio F.lli Paleni: a soft-paste cheese of short maturation that represents the everyday version of the great artisan cheesemaking tradition of the Bergamasco Seriana Valley. In the Seriana Valley this tradition never disappeared. The Formagellina differs from the Formagella Val Seriana in its smaller format, softer and more moist paste, very thin or absent rind and a maturation measured in days rather than weeks. The pasteurised cow's milk gives a white and soft paste with sweet and milky flavour.
