The Caciocavallo Affumicato Spinelli represents one of the most authentic interpretations of caciocavallo from Southern Italy. Its natural smoking gives it an enveloping aroma and a unique character.

Origin and raw materials
Made with cow's milk from monitored farms. The smoking process is carried out using selected woods, which give the cheese a balanced aroma that is never overpowering.

Production technique
The curd is stretched according to tradition, shaped by hand, and tied in pairs. After an initial maturation, the cheeses are slowly smoked and then aged to develop structure and aromatic complexity.

Notes of butter, cream, wood, hay, and a pleasant natural smokiness. The flavour is full, savoury, and harmonious, with a long, slightly toasted finish.
