Origin and Ingredients
Made from high‑quality cow’s milk sourced from controlled farms on the Asiago plateau. Natural cultures and salt are carefully balanced to create harmony between sweetness, savoriness and aromatic depth.

Production Method
The milk is processed traditionally, slowly heated and broken into fine curds. The wheels are pressed, salted and aged:

Mezzano: 4–10 months
Vecchio: over 10 months

Aroma and Flavor

Mezzano: balanced, buttery, lightly nutty.
Vecchio: stronger, more complex, with a long aromatic finish.
