Pecorino Romano PDO Cappato Nero is one of Italy’s most iconic cheeses. Recognizable by its black rind, it offers a powerful, savory and distinctly Mediterranean flavor. Its firm texture and intense aroma make it a cornerstone of traditional Italian cuisine.

Origin and Ingredients
Made exclusively from sheep’s milk sourced from certified DOP regions (Lazio, Sardinia, Grosseto). The milk’s high protein content gives the cheese its firm structure and characteristic flavor. Only sheep’s milk, salt and lamb rennet are used.

Production Method
The milk is heated, curdled and broken into fine granules. After molding, the wheels are dry‑salted multiple times and coated with black wax. They are then aged for at least 5 months, often longer for a more intense profile.
