Salame Felino PGI: the king of Italian salami

Origins and history
Salame Felino takes its name from the town of Felino, in the province of Parma, where the tradition of its production has roots going back to the Middle Ages. As early as the 15th century, local salumieri were renowned for the quality of their products, and over the centuries the recipe has been refined to reach the perfection we know today.
In 2013, Salame Felino obtained PGI recognition from the European Union, protecting a product that can only be made with precise raw materials and production methods, in compliance with a rigorous specification.
How it is made
Salame Felino PGI is obtained from selected pork — mainly leg and shoulder — medium-ground and seasoned with salt, peppercorns and dry white wine, traditionally Malvasia dei Colli di Parma. The mixture is stuffed into natural casing and left to age for a minimum of 25 days, during which it develops its characteristic aroma and soft texture when sliced.
The slightly curved shape and the outer surface with noble moulds are the distinguishing marks of an authentic Salame Felino.
How to enjoy it
Salame Felino is a cured meat to be enjoyed simply, so as not to mask its aromatic nuances:
- On its own, sliced thick on country bread or Romagnola piadina
- On the charcuterie board, accompanied by Parmigiano Reggiano, prosciutto crudo and giardiniera
- With cheeses, particularly fresh or soft-paste cheeses that balance its savouriness
- As a starter, with fruit mustard or wildflower honey for a sweet-savoury contrast

Tradition pairs Salame Felino with Emilian sparkling wines, in particular:
- Lambrusco di Sorbara — fresh and lightly tannic, it cleanses the palate between bites
- Malvasia dei Colli di Parma — aromatic sparkling white, the territorial pairing par excellence
