Torre di Gromo Paleni is an artisanal mountain cheese, produced with freshly milked raw milk from Valle Seriana. It has a truncated pyramidal shape, inspired by the tower of Gromo castle. The rind is smooth, slightly rough, thin and yellowish, darker and more compact with aging. The paste is soft, fragrant and with a sweet and aromatic taste, with an aftertaste of fresh milk that intensifies over time. The smell is delicate, with more pronounced milky notes during summer months.

Torre di Gromo is the most iconic cheese of Caseificio F.lli Paleni: the truncated pyramid shape, inspired by the medieval tower that dominates the village of Gromo in the upper Seriana Valley, makes it immediately recognisable on any board — a cheese that tells its territory before being tasted. Gromo is one of the best-preserved medieval villages in the province of Bergamo: its walls, tower and grey stone houses built around the Colleoni castle narrate centuries of Lombard history. Caseificio F.lli Paleni, founded in the heart of this village, chose to embody the territorial identity of Gromo in a cheese of unusual shape. The Seriana Valley — rising from Bergamo towards the alpine passes of the Presolana and Vivione — is historically a land of cattle farming and artisan cheesemaking with a tradition of alpine and dairy cheeses dating back at least to the 13th century. The thin smooth yellowish edible rind protects a semi-hard compact paste with fine eyes. The profile evolves progressively: sweet and milky in young wheels, more aromatic with herbaceous notes in semi-aged versions.
