Fontina Vera Aosta PDO is the symbolic cheese of the Aosta Valley, produced exclusively with fresh milk from a single milking, from Aosta cattle fed with herbs and fodder from the territory. Worked entirely by hand twice a day and aged at least 90 days, it presents a soft, elastic, straw-colored paste with fine holes. The taste is sweet, buttery, harmonious and always melting. A niche product, authentic and mountain-made, ideal both raw and in cooking.

How to store Fontina Vera Aosta DOP and what to pair it with?
- Temperature: 4-8 degrees C, wrapped in slightly damp cheese paper
- Do not seal in cling film: the paste must breathe
- Remove at least 30 minutes before tasting
- Use within 2-3 weeks of opening
In the kitchen: Historic and irreplaceable ingredient of Valdostan Fondue - with milk, eggs and black truffle. Base of Zuppa alla Valpellinentze with rye bread and savoy cabbage. Melted on polenta concia with alpine butter. On a board with Jambon de Bosses PDO and mocetta. Pairing: Gamay d'Aoste, Fumin or alpine white wines such as Petite Arvine for young versions.

Description:
Semi-cooked paste cheese made from whole raw milk of a single milking of Aosta Valley cows. Soft, elastic, melting paste with an intense aroma. Minimum ageing 80 days in mountain caves. Each wheel passes the Consortium expert evaluation before branding. Three types: base, Alpeggio, Lunga stagionatura (minimum 180 days).
