Fontina Vera Aosta PDO is the symbolic cheese of the Aosta Valley, produced exclusively with fresh milk from a single milking, from Aosta cattle fed with herbs and fodder from the territory. Worked entirely by hand twice a day and aged at least 90 days, it presents a soft, elastic, straw-colored paste with fine holes. The taste is sweet, buttery, harmonious and always melting. The Fontina Vera Aosta PDO is the queen of Valle d'Aosta cheeses, a unique mountain product protected by the Protected Designation of Origin. It comes from a centuries-old tradition and an extraordinary land, where the cows' natural diet gives the milk an unmistakable aromatic profile.

Origin and Raw Materials Produced only with fresh milk from a single milking, sourced from Valle d'Aosta breed cows. The animals feed exclusively on local grasses and hay, rich in alpine herbs that enrich the cheese with sweet and floral notes.

Processing Technique The processing is entirely manual, twice a day, with freshly milked milk. The curd is semi-cooked and the wheel is then aged for at least 90 days on wooden boards, where expert cheesemakers tend each wheel according to the rhythms of tradition.

Aroma and Taste Soft, elastic, straw-colored paste, with fine, even eyes. The taste is sweet, buttery, harmonious, always melting in the mouth. A light herbaceous note typical of alpine cheeses is not missing.
