History and origin
Mortadella is the queen of Bolognese and Emilian norcineria: one of the oldest and best-known cured meats in Italy, whose history goes back at least to the 14th century and which in 1998 became the first Italian cured meat to receive PGI status — recognition for a centuries-old production tradition that has made Bologna the capital of Mortadella. Mortadella Bologna PGI is made with finely minced pork, slowly heated until the characteristic pink colour, the soft texture and the distinctive seasoning of white pepper and optionally pistachios develop. The 4 Castelli — the four castles of the Reggio Emilia territory that give the Negroni brand its name — evoke the historical rootedness of the product in the Emilian landscape. Negroni is one of the most renowned historic producers of Mortadella Bologna: founded in 1907 in Cremona, with a long tradition of producing Mortadella according to the traditional Bolognese recipe: very finely minced pork, precise seasoning with pepper, myrtle and nutmeg, slow cooking at low temperatures — the process that guarantees the unique texture and the distinctive mild flavour of Mortadella.
Storage and use in the kitchen
- Whole (sealed): 4–8 °C; until the use-by date
- Once cut: wrap the cut surface in wax paper; use within 3–5 days

Mortadella Bologna PGI is protected by Reg. EC No. 1107/96 and its specification prescribes that production must take place in a specific area of central Italy. Negroni is an authorised producer of Mortadella Bologna PGI.
