The European roe deer (Capreolus capreolus) is the most widespread wild animal in South Tyrolean forests and the most regulated for hunting: with its low body mass — 15–30 kg live weight — the roe deer is the animal with the lowest meat proportion, meaning the blend with pork is higher than for other game. Roe deer meat is extremely lean, almost fat-free, with a flavour evoking forest berries, autumn leaves and alpine herbs — but can easily become rubbery and dry if handled incorrectly. Tito Speck has developed a technique that optimally valorises roe deer meat: careful selection of cuts, seasoning with juniper berries, rosemary and a hint of grappa, uniting the natural freshness of the roe deer with the body of the pork base. The result is the most delicate of all South Tyrolean game charcuterie.
