Finocchiona is one of the most characteristic salamis of Tuscany and was recognised by the European Union in 2015 with PGI status: its distinctive seasoning with fennel seeds or wild fennel — 'Finocchio selvatico' — gives it a fresh, anise-like and herbaceous aroma that radically distinguishes it from all other Tuscan salami types. The origins of Finocchiona are rooted in medieval Florence, where the spice fennel was used as a cheap substitute for costly black pepper in sausage-making — an elegant solution for craftsmen who nonetheless wanted to produce aromatic and distinctive cured meats. Over time, fennel was no longer seen as a substitute but as a deliberate and distinctive flavour choice that made Finocchiona its own identity. The PGI specification prescribes: heavy Tuscan pigs, use of fennel seeds or wild fennel, minimum ageing of 15 days for small formats and up to 5 months for the traditional large formats. Fiorucci is one of the producers who has made this speciality known at national and international level. The fat-meat ratio is balanced; the colour of Finocchiona is characteristically lighter than other salamis, as fermentation less strongly controls the oxidation of myoglobin.
