Golfetta is one of the best-known and most popular branded products in the segment of Salamini for direct consumption in Italy: an innovation developed in the 1960s that has become a genuine classic of the snack and school break, combining the artisan salami tradition with the requirements of modern mass marketing. The Golfetta brand — probably a neologism combining the diminutive of 'golfo' (golf) with the playful character of the name for a young audience — was developed by a northern Italian norcineria producer to offer a bite-sized version of Milanese salami in a format ideal for direct consumption without cutting utensils. Golfetta belongs to the long tradition of single-portion Salamini widespread in Italy since the post-war years: when meat products became more accessible during the economic miracle years, new formats for direct consumption arose — the individual Golfetta was the most successful. The recipe follows the Milanese norcineria tradition: fine grain, balanced meat-fat ratio, white and black pepper, natural fermentation.
