Where is Salame Felino Aurora made and what is its history?
Salame Felino is the most elegant and delicate salami of Emilian norcineria: named after the village of Felino in the Parma hills, renowned since the Middle Ages for salami ageing — thanks to its favourable microclimate with natural air currents from the Apennines and constant humidity —, it has an organoleptic profile that clearly distinguishes it from the more spiced and fatty salamis of the North and South. The first mention of Salame di Felino as a commercial product dates to 1436 in an inventory of the Bishopric of Parma, which cites 'Insaccati di Felino' as a valuable trading commodity among the products of the Parma hills. The PGI was recognised by the European Commission in 2013. The specification prescribes: exclusively heavy pigs from the Parma zone, manual processing, natural casing — generally pork intestine —, minimum ageing of 25 days in premises with controlled microclimate. Aurora is one of the most historic producers of Salame di Felino, with a long tradition in the Parma hills. The delicate flavour — mild, lightly spiced, with subtle notes of pepper and garlic — makes it the ideal salami for those seeking a more delicate alternative to the more rustic types of northern Italian norcineria.
